Vinprom Troyan Distillery was established in 1948 and to this day uses the same “tried and proven” production methods that have been used to pro- duce slivovitz (plum brandy) in this region for several hundred years. Once the plums have been hand selected and distillation has been completed Troyan slivovitz, Kosher for Passover, is then aged four years in oak barrels which are stored in warehouses where the temperature is a constant 10° C year round. The barrels are periodically rotated so that all the contents receive the same exposure to the wood. Troyanska slivovitz has deservedly become the symbol of the national beverage of Bulgaria.
The whole process of production is carefully observed by the firm’s technologists, who control each stage of the fruits’ treatment – milling, fermentation distillation and storage of the finished products. The special technology which is used by the master distillates of the company preserves the fruit flavors and fragrance of the finished distillate, while the supplementary qualities of the plum rakia are further enhanced through aging in oak barrels.

Slivovitz is a distillate which has been aged for 4 years in oak barrels. As it ages in the barrels it gets its distinctive color and aroma reminiscent of cognac or brandy, while still retaining its typically fruity flavor which is enriched with woody undertones. Slivovitz achieves these unique properties thanks to procedures which were implemented by the Jelinek brothers. It has been produced according to the original recipe since 1934, when it was introduced for export to the United States. We have guarded this tradition for you for many decades.
